Honey Bourbon Cider Fizz - A Cozy, Bubbly Fall Cocktail

Ingredients
  

  • 2 ounces bourbon (choose a smooth, mid-proof bourbon)
  • 3 ounces apple cider (unfiltered if you like a richer flavor)
  • 1/2 to 3/4 ounce honey syrup (see note below)
  • 1/2 ounce fresh lemon juice
  • 2 to 3 ounces sparkling water or ginger beer (for a spicier kick)
  • Ice (cubes for mixing, fresh ice for serving)
  • Garnish: apple slices, lemon wheel, cinnamon stick, or a sprig of thyme

Method
 

  1. Make the honey syrup. Stir 1/4 cup honey with 1/4 cup hot water until fully dissolved. Cool before using. Store leftovers in the fridge for up to 2 weeks.
  2. Chill your glass. Pop a rocks glass or a highball in the freezer for a few minutes, or fill it with ice while you mix the drink.
  3. Add the base ingredients. In a shaker or mixing glass, add bourbon, apple cider, honey syrup, and lemon juice.
  4. Shake or stir with ice. Fill with ice and shake for about 10 seconds (or stir well if you prefer less dilution). You want it cold and blended.
  5. Strain into the glass. Add fresh ice to your chilled glass and strain the mixture over it.
  6. Top with fizz. Add sparkling water for a light finish or ginger beer for spice. Start with 2 ounces and adjust to taste.
  7. Garnish and serve. Add a thin apple slice, a lemon wheel, or a cinnamon stick. A small thyme sprig adds a lovely aroma.
  8. Taste and tweak. If you want more sweetness, add a splash more honey syrup. For brightness, add a squeeze more lemon.
