Preheat the oven to 400°F (205°C). Line a baking sheet with parchment for easy cleanup.
Prep the bagels. Split them and place cut-side up on the baking sheet. For extra crispiness, lightly brush with olive oil.
Toast base (optional but recommended): Bake the plain bagels for 3–4 minutes to prevent sogginess.
Sauce them. Spoon about 1 tablespoon of pizza sauce onto each mini bagel half.
Spread to the edges for even flavor.
Add cheese. Sprinkle mozzarella generously. Add a little Parmesan for a salty, nutty boost.
Top it off. Add pepperoni and your favorite toppings. Keep layers light so everything cooks evenly.
Season. Dust with Italian seasoning and a pinch of red pepper flakes if you like heat.
Bake. Return to the oven for 8–10 minutes, until cheese is melted and bubbling with lightly golden spots.
Finish and serve. Let cool for 2 minutes, garnish with fresh basil or parsley, and serve warm.
