Mini Pizza Bagels - Quick, Fun, and Crowd-Pleasing

Ingredients
  

  • 12 mini bagels, split (or 6 regular bagels, split, then cut halves in half)
  • 1 to 1 1/2 cups pizza sauce (or marinara)
  • 2 cups shredded mozzarella cheese
  • 1/3 cup grated Parmesan (optional but great for flavor)
  • 2–3 ounces pepperoni, mini or sliced and quartered (optional)
  • 1/2 cup toppings of choice: diced bell peppers, mushrooms, olives, red onion, cooked sausage, or pineapple
  • 1–2 tablespoons olive oil (optional, for brushing)
  • 1 teaspoon Italian seasoning or dried oregano
  • Red pepper flakes, for heat (optional)
  • Fresh basil or parsley, chopped (optional garnish)

Method
 

  1. Preheat the oven to 400°F (205°C). Line a baking sheet with parchment for easy cleanup.
  2. Prep the bagels. Split them and place cut-side up on the baking sheet. For extra crispiness, lightly brush with olive oil.
  3. Toast base (optional but recommended): Bake the plain bagels for 3–4 minutes to prevent sogginess.
  4. Sauce them. Spoon about 1 tablespoon of pizza sauce onto each mini bagel half. Spread to the edges for even flavor.
  5. Add cheese. Sprinkle mozzarella generously. Add a little Parmesan for a salty, nutty boost.
  6. Top it off. Add pepperoni and your favorite toppings. Keep layers light so everything cooks evenly.
  7. Season. Dust with Italian seasoning and a pinch of red pepper flakes if you like heat.
  8. Bake. Return to the oven for 8–10 minutes, until cheese is melted and bubbling with lightly golden spots.
  9. Finish and serve. Let cool for 2 minutes, garnish with fresh basil or parsley, and serve warm.
